This fully-captioned knitting technique video tutorial demonstrates how to pick up the stitches for an afterthought heel around a scrap yarn placeholder (this approach is sometimes called a "forethought" heel). The technique is shown using two needles, and works the same way with any kind of double-pointed needles (including flexi-flips), magic loop (one long circular needle), or two circular needles.
